A red thread connects the leaf
through this issue of Qualitaly
Magazine. It is eclecticism of
contemporary cuisine, which melts
and blends into a dynamic opening to
the culinary cultures of the world. It
is what we see during these months
with Expo, a sort of great journey in
gastronomy from all continents. Net of
all the talk around the central theme
of the World Exhibition - “Feeding
the planet, energy for life” - which for
some is poorly understood by many
of the participating countries, which
would rather use the stage to promote
the Expo tourism in their country, the
center of interest for the millions of
visitors who visit the show in recent
months is the possibility of bringing
other cultures through different
cuisines. And in this the cultural value
of food (it is, after all, one of the
battle of Slow Food) is powerful.
For this reason we open our reading
journey taking care of spices,
ingredients in global cuisine of our
time are having a growing interest in
all fields of application from food to
drinks, helping to create this cultural
melting pot from which arise through
combinations, and hybridization
experiments also amazing dishes.
A path that leads us then to find
out more about an ingredient son
of globalization, much used in the
catering and food industry - palm
oil - and which today is heavily
challenged in many areas, both for
nutritional issues, both the ethical and
environmental.
Yet another article that brings us to
the comparison with other cultures
is one that leaves from street food
as a popular phenomenon to reach
its interpretation dining, one of the
kitchen, with examples ranging in
different countries.
We cannot forget the cooking tools,
the tools of the trade as essential
pots and pans, now become the tools
specialized for different cooking
methods, to indispensable equipment
in any kitchen of the restaurant, as
the microwave.

Special day, June 29 for the
Cooperative Italian Catering, which
hosted the meeting in the premises
of the managing committee of the
IRE (Independent retail Europe), the
European organization of independent
distribution. Not a small thing, if we
think that among the members include
distribution organizations the likes
of German Edeka, Spar, Rewe, the
Swedish Ica, the Finnish Kesko, the
grouping of French Mousquetaires
(which includes six brands including
Intermarché), of the European Emd
(contemplating the Italian Selex)
and Italy’s Conad (the second Italian
retailer). As a whole the association
represents more than 360,000
independent retailers and 23 groups
or associations of groups with a total
turnover of over 1,000 billion Euros,
