supplier. A praise we accept also
in this issue. On Pag. 27, there is a
wonderful interview with ‘Aunt Piera’,
the chef from Massa Carrara that
we chose for the cover of Qualitaly,
who lists among the reasons of
her success, quotes her suppliers
including GF1, our partner in
Tuscany.
As always, this issue of the magazine
also hosts numerous and important
ideas for ‘outside’ activity.

TUTTOFOOD 2017
consolidates its
leadership
More and more an international
platform, as well as for the targeted
meeting between supply and demand,
also for the sharing of expertise. This
describes TUTTOFOOD 2017,
At Fiera Milano from Monday 8th to
Thursday, May 11th. Many sectors are
involved:
TUTTOMEAT (meat and cured
meat), TUTTOSWEET (dessert),
TUTTODRINK
(Ho.Re.Ca. and
beverage), TUTTODAIRY (dairy) and
several multi-products. The most
represented countries
among the exhibitors include France,
Germany, Spain, United Kingdom,
Baltic and Scandinavian countries
from Europe; USA, Canada, Mexico
and Brazil from the Americas; Arab
Emirates from the Middle East;
Singapore, China and Hong Kong
from Asia, many of the key markets
on which TUTTOFOOD 2017 has
launched a series of focused projects.
More than 2,200 hosted profiled
buyers, who will be able to count
on a new, more targeted platform of
matching with particularly numerous
representations from the USA, Europe
(in particular Germany, France and
Spain) North America (Mexico) and
South America (Brazil), while there
are expected business visitors from
110 countries. Among the latest
from TUTTOFOOD 2017 are the
two new areas, conceived from the
agreement with Veronafiere: Fruit
& Veg Innovation, which integrates
the range of the IV gamma, and
Wine Discovery, a space dedicated
to the excellence of wine tended
by Vinitaly International Academy.
TUTTOHEALTH is instead the area
dedicated to healthy, organic and
vegetarian-vegan products, which
includes Nutrition Space and which
received the patronage of the Ministry
of Health. Finally TUTTOSEAFOOD
(fish) will be complemented by an
area focused on sustainable marine
resources in collaboration with Blue
Sea Land, International Expo of agri-
food regions of the Mediterranean,
Middle East and Africa.
What will arrive
on our dishes?
Seeds&Chips,
the Global Food
Innovation Summit.
According to recent UN estimates,
by 2050 the world population will
go from the current 7 to 9.7 billion,
about 2.5 billion more people, who
will populate the Earth and that food
production will have to be doubled,
reducing waste and, in particular,
experimenting with alternative
foodstuffs. At Seeds&Chips, the
Global Food Innovation Summit
(8th - 11th May 2017 - Fiera Milano
Rho), ample space will in fact be
dedicated to addressing this crucial
global challenge: from the nutrition
of the future, to new food production
techniques to food security and the
right to healthy, sustainable and
accessible food for everyone. Based
on this premise and the values
inherited from Expo2015, one should
not be upset if in a few years on our
plates there will appear “tasty” cricket
snacks and micro-natural products
with surprising nutritional features or
bacon and shrimps based on algae.
Two Italian start-ups, Addento and
Mi Green Food and the international
Seamore Food and New Wave Foods
are convinced, innovative companies
present at SaC17 who are working in
this direction. The FAO has defined
insects as food of the future and
Addento has been experimenting in
this field for years. The end result is a
line of new foods with an alternative
ingredient: cricket flour: nutritionally
superior and more sustainable than
other foods.
Great success
in Marina of Carrara
for Tirreno CT 2017
From bread to pizza, from processed

sector; “Tirreno CT 2017” was this
and much more,
a unique format that brings together
innovations, solutions and trends for
the whole world
of catering and hospitality. The
national exhibition for hotels, bars,
ice-cream parlours, pastry shops,
bakeries, restaurant and community
took place from 19th to 22nd

boundaries are widened:
