We have Michelle Obama, Slow Food,
the Barilla CFN, Stefano Bottura and
the European Union. These chefs have
put their faces and put themselves in
the kitchen, creating delicious dishes
with leftovers, and restaurants are
springing up cooking “ to zero waste
“ (see box). Why do we need to know
that every year just in Italy 6 million
tons of food scraps between not reused,
damaged or expired food ( maybe
only in packs) get thrown away, when
8 million Italians under the poverty
line do not have money to buy food
indignant.
Food is wasted at every stage of the
food chain, but how much of this
waste is “ guilty “ of the restaurants?
According to a survey by the
Foundation for Subsidiarity, Politecnico
of Milano and Nielsen, while the final
consumer throws about half of the food,
catering generates “only” 200 thousand
tons of surpluses. That, however,
amounted to 6.3% of the food handled,
while the production and distribution
amounted to 2.5 / 2.9% and 0.4% on the
transformation.
The surplus food is, at least in part, “
physiological” and inevitable. However,
there are actions that can be taken to
curb the problem, by redistributing the
part of food that is still usable, which is
about half. Let’s see what.
Giving to the poor
Since 1997, the Banco Alimentare
works to retrieve food and hot meals
for facilities that deal with the poor.
Present today in 20 Italian cities,
collected in 2013, 65 thousand tons
of food and 1 million meals. But it
is not the only one. In the field fell
associations and foundations. Here
Foundation, which as with “good meal”
collects unused food stamps, food still
good but no longer marketable, and
the meals unsold Tirrenia ship arrived
in port, for donation to families and
individuals in need. Last MinuteMarket
recovers cooked meals are not served
by cafeterias, self-service and fresh food
from markets and retail chains.
Although there are many large and
small initiatives of individuals, groups
or parishes, today only 6% of the
surplus takes the road of charitable
organizations.
