pour over the boiling broth and cook
over abundant medium-high heat
without stirring. Five minutes before
the end of cooking (about 15 minutes
of cooking) add the leek and bring
the rice to the optimum cooking dry.
Remove from heat and leave to rest for
at least 2 minutes. Add the Parmesan
cheese into chunks and grated pepper.
Stir vigorously (the parmesan cheese
acts as a fat and then add the butter
emulsifies without), if you need to
lengthen the broth until the desired
creaminess.
FOR MUSHROOMS: cut reed switch
in the egg white and then in the mix
of bread and starch, fry in butter with
rosemary and garlic.
FOR WALNUTS: Roast the kernels
to dry and when hot add the sugar,
caramelize, add the balsamic vinegar
and seasonings.
FINISHING: Chop the sun-dried
tomatoes, add the lemon zest and oil.
Leave to marinate for at least one hour.
PLATE: Place the rice in the pot. At
the center put the mushrooms golden,
sprinkle with nuts and marinated
tomatoes.

Moms, dads, grandparents, uncles and
babysitters ready to listen. Farewell
to dinners at home “ because you
know with kids ... “ and goodbye to
dinners out “What are we doing with
the children?”: From now on “ children
friendly “ bars and restaurants will
take care of it.
What does “restaurants and bars
suitable for children” mean? It
basically means premises with
ideas for games and for the wait or
promotional evenings for families,
assistance in choosing the menu with
trained staff and ad hoc payment
options to the table. And even with
local children’s menu, half portions,
breakfast and snacks for children,
illustrated menus, information on
ingredients and story on the supply
chain. Anyway, that’s not all. To
ensure peaceful meals to all families
there are different new tools, such
as, high chairs, adapters and chairs,
plates, containers and cutlery for
children, equipment for autonomy in
the bathroom and to heat bottles and
baby food. Also, as they proceeded
to a safe placement of the tables,
they thought about the control of the
sounds, to have more attention to
breast-feeding women and to create a
parking area for strollers. All attention
that bind quality of raw materials and
the dishes prepared, and the equally
essential relationship of kindness and
trust among restaurateurs, waiters,
bartenders and families. Basic rules
still apply now that are seasoned with
valuable tricks for children.
