it gets packaged after being grated
in a protective atmosphere, without
undergoing any process of drying and
no added preservatives.

The challenge: Developing the offer
of Italian restaurants, preserving
the classic style of the tradition, but
resold with injections of modernity.
The goal is to continue nursing their
customers between the reassuring
arms of tradition, nourish the soul
with the food of memory, pick up
the threads of a family relationship
/ generation, which has dishes, such
as emotional vehicle. More simply,
reassure the client with the usual
promise of quality represented by the
long history of Italy in the kitchen,
but giving the dishes a new suit that
allows them to communicate with the
younger generation. An appropriation
of values that could drop a concept
much in vogue until a few seasons
ago, now fallen into disuse rather: in
other words a light cuisine.
As soon as the ‘90s were over with
their obsession with the form, after
the healthy burst and the nightmare, at
least for Italian (functional food which
gets to be healthy just being chewed),
today the refrain is about health and
fit. Everything based on a soft way
of eating healthy and of course tasty,
getting back to the ingredients used in
the past.
Mixing styles and different proposals,
according to logic that does not
