Efficiency and
Effectiveness

Last year ended with a series of
measures that have positive reflexes
want, want critics dining in the activity.
We refer to the obligation of the cap
“antirabbocco” on bottles of virgin
and extra virgin olive oil to be put on
the table, the raising of the exemption
for food stamps and the obligation to
indicate allergens in menu. To them
we dedicate our first floor from which
emerges as a very positive measure,
are flanked by two most criticized by
associations representing foodservice
operators, because weigh down the
daily work of a class already severely
shaken by the crisis of recent years.
But the food cannot stop. Indeed,
precisely because it is, as many service
activities, the outpost closer to the
consumer, must play all the cards
available in terms of efficiency and
effectiveness.
We in this issue we want to point out
some, such as frozen vegetables. Long
since cleared the food culture of the
consumer today are a key resource in
the pantry of the restaurant for at least
two reasons: the first that reduce up
to 60% waste due to the cleaning of
vegetables. The second is that they are
an ingredient to be used as needed,
even in case of sudden demand and
as such are also helpful to chefs and
restaurateurs; as long as they are well
preserved and that the cold chain is not
interrupted.
But the improvement in efficiency
is achieved thanks to technology, to
which we devote two interventions.
The first reports news that sees
us as Cooperative Italian Catering
protagonist’s pioneers in the field: an
app for the reorganization of products
by Smartphone. It is a major step
forward to establish a close relationship
between supplier and customer that
breaks down barriers, but reduces
errors, misunderstandings, timing. The
second operation is instead related to
the reservation system from app always,
always with your smartphone or web,
the point of arrival is the integration
with the Pos and management systems
of the room. Everything with the real
architect of the change of our time: the
smartphone.
As usual, to close a roundup of wines,
this time bio, and some suggestions on
how to decorate the table.

All the important observers will spend
in stating that the optimism about the
end of the crisis begins to be supported
by the numbers and by a favorable
trend. It is not my job to go into
detail. It is not even a matter of debate
whether the GDP will increase by a few
decimal more or less. But there seem to
be all conditions. At least for now: The
halving of oil prices, the increase in
disposable income, exports growing. So
the car is in motion again. Even if ...
Although, remember, consumption
arrears of ten years and the growth of
Italy, compared to Europe, has always
been a step back. We should consider
that unemployment does not mention
to retreat significantly. Although the
