The packaging for the catering

industry is a 1 kg cylindrical

container with a wide opening.

It is made of tinplate and it has

serigraphs. The container is sealed

with peel-away technology and

the inside of the packaging has

a food-safe coating. “We have

chosen tinplate rather than plastic

or softer materials”, explains

Amelio, “because we look at details.

Air cannot enter the container,

so the products’ stability is not

compromised and shelf life is

longer”. In order to guarantee

safety, the company carries out

repeated analyses: visual checks and

sample tests (organoleptic chemical

analyses, heavy metals tests,

foreign materials tests, pesticides,

water activity, humidity levels,

microbial load, Enterobacteriaceae

and Salmonella...). “These analyses

are part of the protocol Quality

Management UNI EN ISO 9001 and

HACCP”.

What

are the advantages of this product

for a chef? “Stock cannot and must

not cover the natural flavours of

food”, says Amelio. “In the hands

of an expert chef, it is an extra

help to blend and maximize the

flavours of a dish. To do this, stock

has to be good and of superior

quality. In these 50 years of activity

and research, our technicians

have always paid much attention

to emerging trends in taste and

nutrition and they have managed

to create products with a strong

character and at the same time close

to homemade products. The use of

natural flavourings gives Qualitaly

Vegetable Granulated Bouillon

an intense natural and delicate

character. The product is gluten-free,

lactose-free and hydrogenated fats-

free. A chef can maximize flavours

and at the same time think about

people with food intolerances. The

perfect granules allow the product

to dissolve easily in very little time.

In contrast with the meat granulated

bouillon (GranSapore Qualitaly), the

Vegetable option does not contain

meat extract and has a higher

concentration of vegetables. It uses

sunflower oil and the recipe is easier

and less spiced. “The purpose is

different too”, concludes Amelio.

“Vegetable Qualitaly is best used in

vegetable broths and soups or to add

a touch of flavour to vegetable dishes

like risottos, soups, creamy soups,

second courses and side dishes”.
