birth of bottles with a taste profile and

a drinkability unprecedented compared

to the past. There are some other factors

outside of the wine world for helping to

settle this habit, the deconstruction of

traditional meal at the birth of cuisines

with a strong innovation, which do not

fit in a classic assumption that affirms

the inseparability between local cuisine

and wines expression of the territory, as

an indissoluble embrace? If fusion must

be, if the prevailing crudity, if even the

giants of tradition are a valuable support

in the sparkling wine (the classic pairing

once heretical between champagne

preconceptions and offer sparkling wine

throughout the meal.

least, the psychological aspect: bubbles,

sun, evoke the party, uncork a bottle of

sparkling wine embodies a gesture that

refers to the pleasure-friendliness. Also

it refers to luxury, although today you

can find on the market sparkling with

a price / quality very much in favor.

Obviously, the restaurateur careful you

are already aware of this trend and has

changed its approach to champagne,

not relegating the last page of the wine

list, but also proposing for the whole

meal, to customers for food choices and

“approach” to evening can appreciate

this choice. For everyone else, here is a

Characteristics

From Pinot Noir grapes (85%) and

Chardonnay (15%) from vineyards 360

meters above sea level. It has an aging

of 30 months on the lees, straw yellow

full and persistent. Ages 1-2 years after

disgorgement.

The sturdy construction and versatility

make it a wine for the entire meal,
