FIGHT AGAINST CONTRACTUAL
DUMPING
New monthly employer contributions
have been established for
supplementary health care. From
1 February 2018, companies will
be required to pay a contribution
of €11 per month per worker for
twelve months’ pay and €12 from 1
January 2019. “There are a number
of institutions, bilateral bodies,
supplementary health care, which
are very interesting for the loyalty
of the employee and appreciated by
the worker. The aim was to combat
the dumping that some companies
do by not paying these contributions
to guarantee the performance of the
bilateral body and supplementary
health care.”
100 EURO MORE BUT WITHOUT
PREVIOUS PAYMENT
An increase of EUR 100 over 4 years to
the fourth level redefined for the other
levels with 5 starting dates in January
2018, January 2019, February 2020,
March 2021 and December 2021 is
expected. For the first time, nothing has
been paid for the contractual holiday
period, so the increases will start on
1 January 2018. “We acknowledge the
sense of responsibility of the union,
which understood that market situations
following the crisis did not allow
companies to bear such a cost.
IS EVERYONE HAPPY?
While predictable satisfaction was
expressed by all parties who signed,
the BASIC TRADE UNION speaks of

in the sector at the mercy of the

THE STEPS OF WAGE INCREASE
Wage increase
(not absorbable) is distributed with
the following effective dates:
€ 25,00: 1 January 2018;
€ 20.00: 1 January 2019;
€ 20.00: 1 February 2020;
€ 15.00: 1 March 2021;
€ 20,00: 1 December 2021.
Since 1 February 2018, the
contribution to supplementary health
care has increased by € 1 and from 1
January 2019 an additional € 1 to be
paid by the employer.

ALAJMO
Erminio Alajmo, founder of the three-
star restaurant Le Calandre and father
of Raf, Max and Laura, created an
empire. As a restaurateur (the Alajmo
group now has ten restaurants), he
is satisfied with the new contract,
which gives him greater flexibility.
“The world has changed and this is

for companies that can make you
do a few hours more overtime, but
you should always remember that
the staff is essential to the success of
a restaurant, and the dining area is
the most difficult to find: they must
be followed, trained, rewarded with

a little like salespeople, a little like

Technology is also increasingly
entering the catering industry, and you
can use an app to recruit staff. Like
Shakejob from Openjobmetis, which
interested us because it is the only
one among many that allows, once
agreements have been made, to sign
an employment contract automatically,
avoiding dumping workers or
borderline proposals, and allowing
the restaurateur to find staff even last
minute. Qualified? “To understand
availability and needs we meet
everyone in person, both employers
and workers. The latter all have
HACCP certificates and there is the
possibility of recall, if the employer
was treated well. The logic is that of
the Gig economy and flexibility on
both sides,” explains one of the app’s
creators, 26-year-old Alberto Brianza.
And the contract? “I welcome it - said

- because it further acknowledges
the need for work flexibility in the
sector structurally subject to stop and
go requests, especially in the case
of major events (weddings, catering,
illness). The number of workers
permitted to work on a temporary
basis has increased from 8 to 10%.”
