Also in this case, the first critical issue to be faced was the old and inadequate premises in Rovereto. And also in this case, I managed to find spaces where I could put into practice the model already experimented with the hotel-management school. However, widening the field of action from the stoves to the entire range of skills that must accompany those involved in hospitality. So I transferred the courses to Levico and Roncegno, where I particularly involved a small hotel adjacent to the school - Villa Waiz. And so, following the same logic that had guided me in the creation of the restaurant, I gave life to the didactic hotel. WITH WHAT RESULTS? I would say that the formula is proving to work on both fronts. It allows the students to fill the training gap that inexorably still exists at the end of the first three years of study. And it also helps the teachers: at the end of the lunches as well as the stays, in fact, the guests are asked to fill out an evaluation form, thus providing valuable feedback on the preparation of the students. AND THE MODEL HAS ALSO CONVINCED ABROAD... Exactly. With a view to continually improving our teaching offerings, we sought the advice of Swiss universities (SSST in Bellinzona and Swisse Education Group in Montreaux), which represent true excellence in our field. And we had the honour of seeing our courses awarded the same dignity as their Swiss counterparts. That is to say that, from that moment, those who attend the two-year course in Roncegno Terme can directly access the third year of the universities of the Swisse Education Group in Montreaux. This is a unique recognition in Italy, which has projected us into a national rather than regional dimension. And from here, the idea of another project... WHICH ONE? In 2017 we launched Ospitalia, a cultural and opinion movement that intends to shine a spotlight on the entire sector, thus making up for the imbalance towards cuisine that has marked recent years. The project, which has 157 member schools, will soon take the form of a foundation, which will have the task of bringing together around the brand all those who care about the value of hospitality, to restore strength to what is a real Italian heritage, able to become an important engine for the development of our country. All this is based on three pillars: culture, training and businesses. But we didn’t stop here. Ospitalia is also a partner, with regard to training initiatives in the field of hospitality, of the Biellezza Foundation, founded in Biella on the initiative of local entrepreneurs, including the Zegna and Sella families. It also stimulated and encouraged the birth of HIA (Hospitality Innovation Academy) in Florence, an Academy, the result of an Italian-Swiss collaboration, which embraces Ospitalia’s philosophy.
