JUN. JUL. 2021 I AT PAGE 1 The future, beyond the ‘Pillars of Hercules The whole world (or almost) locked indoors house unable to go out or, in order to do so, have a valid reason? Done! And, if we had been told about it, or seen it in some film, we would have thought it was pure science fiction! Our life in the last year and a half has been completely turned upside down. We have seen, said and done things that we never even dreamed of. Today we are veterans, like war veterans, we are the survivors (or almost) of Covid 19. This tiny ‘being’ that changed the course of history forever. Today it seems that the enemy is under control, or so they say. And so life takes back its space. Everyone is out: cinemas, museums, gyms, swimming pools, theatres... and, above all, bars and restaurants. Even the rain doesn’t stop patrons eager to get back to normal. The economy breathes a sigh of relief and we entrepreneurs begin to see a future again. But what is the new normal? The world has certainly changed; we have changed. Cities have woken up differently: dehors have changed the skyline of major cities; on pavements, in the street instead of cars, in squares... there is a riot of outdoor tables (report on page 18). And then there is the almost maniacal attention to environmental hygiene and safety, an essential requirement for eat-out consumers (page 30), not to mention riders and delivery (service page 26), a ‘new’ way of enjoying original dishes and, perhaps, avoiding the need to cook for oneself. Finally, technology: before the healthcare emergency we talked a lot about it in our magazine. Some people even turned their noses up at it: ‘it’s too complex, it’s a future that’s still far away’, but no. All those who were unprepared for this sudden upheaval found it even harder to stay afloat. Today we can no longer afford not to invest in technology (p. 32). In a fast-paced world, however, we must also be able to recognise something that many have failed to grasp: nature has sent us a clear message. Nature has given us a clear message: stop mistreating it, nature is sovereign, and Covid has taught us that. And so the concept of ethics and sustainability becomes central. We are not the masters of the world; only by respecting the ecosystem can we have a future. This is taught to us, very humbly, by our cover star, chef Pietro Zito (page 22), who in a small village in the Murgia region of Bari wanted to give his colleagues a very strong lesson. This important work, thanks to prudent decisions and changes to the Articles of Association, has given our Cooperative great stability, solidity and growth, and will certainly guarantee a positive future. All this has allowed us to weather the storm of the pandemic with great confidence and to be ready to be protagonists in this restart. During these 7 years we have achieved important results, among which the excellent operating profits, the great and strategic growth in imports of Ittico Gelo from all over the world and the financial solidity stand out.
