Is throwing everything away or giving it away to employees really the only solution? Fortunately, no, because even in the kitchen there are technologies that make it possible to extend the duration of a fresh food, both raw and cooked, for a longer time. The first is the vacuum. In practice, the food is packaged in a plastic food bag (to prevent molecules from being transferred from the bag to the prepared food), from which a special device removes air before sealing the package. The absence of oxygen makes it possible to lengthen the conservation of the food, inhibiting the growth of bacterial flora, without using preservatives. The vacuum can also be used to cook the product, provided that food bags are made of materials compatible with high temperatures. The second conservation technique is temperature reduction. The blast chiller quickly cools cooked food that is still hot to the heart and can be used at positive temperature (+3°C, ready to be stored in the refrigerator) or negative temperature (from -18°C down, to be stored in the freezer). Compared to slow cooling, lowering the temperature allows the cooked food to be taken out of the most dangerous area for the growth of microorganisms harmful to health or alterative to the product, improving its shelf life. The blast chilling (especially at positive temperature) can be combined with vacuum chilling to further improve the shelf life of the food. Also, in this case both raw and cooked products can be chilled.
