You must believe it! ______________________________ BOX Recipe Wholemeal macaroni with purple shrimp green broad beans on burrata salentina INGREDIENTS FOR 4 PEOPLE: -70 % wholemeal flour - 30 % semolina flour - 400 g of pasta - 400 g shrimps (Gallipoli reds) - 40 sea urchins (from the Ionian Sea) - 100 g green broad beans (Salento) - 200 g of cherry tomato (from Leverano) - A clove of garlic - Extra virgin olive oil - Salt qb - Parsley qb - White pepper qb PROCEDURE FOR PREPARATION Blanch the whole tomatoes in a little salted water for about 3-4 minutes, remove the skin and cut them into cubes. Blanch the green beans for a few minutes and leave them aside. Remove the flesh of the sea urchins and put in a jar with their own water. Shell the shrimps. Fry a clove of unpeeled garlic in a little oil along with the heads of the shrimps, then remove them as soon as they are golden. Filter the obtained base. Add the previously cut tomatoes and shelled shrimps and cook them for a few minutes. Add the green broad beans and a pinch of salt. Meanwhile, cook the pasta in plenty of salted water for about 10 minutes. Then mix the pasta with the sauce obtained by adding the curly pulp over a low heat. Add the remaining curly pulp. Italiana Neuromarketing) The pandemic has accelerated a process of transformation already underway, which few perceived. Covid-19 brutally “slapped” us. It made us feel more fragile and insecure, it deprived us of our routines that reassured and made us believe that we only had a straight road ahead. If the first lockdown we suffered and accepted with a mixture of anxiety and resignation, the second one we experienced with reluctance, greater indifference or even rebellion. Yet, this difficult and unpredictable 2020 should at least have taught us a few things. That is why the title of this article should be read literally: we need a change of mentality! The great writer George Bernard Shaw used to say: “Those who cannot change their minds cannot change anything else”. One topic that has been particularly studied by the AINEN Neuromarketing team of researchers is how Insights can help us. First of all let’s see what Insights are. In psychology they define the concepts of intuition in an immediate and sudden form. So what are the Insights to focus on the most? Here are some insights: Relationships will be more selective: we will choose people much more decisively, and the things for which it will be worth risking contact. But sociality will remain indispensable for the psycho- physical balance of all of us. Sociality will continue to choose the table as the preferred place. So restaurants and cafes will not disappear. It will be possible to change some behaviour and a greater attention to hygiene, environmental regulations and spatiality. Mobility will be reduced, proximity will dictate law, redefining safe distances. The use of public transport will change in part. Less crowded public transport will be favoured. The use of personal mobility will increase, especially in cities with compact, low-emission and more environmentally friendly vehicles. Living space will be a luxury. We will look for larger spaces in every situation, where even a large number of people present can live together without excessive proximity. In the catering sector, greater distances between tables will be preferred, and the absence of acoustic reverberation (better sound absorption systems) will increase this feeling. We will have less money. This means that when we spend, we will look for something that is really worth it. So service and offer will be much more carefully evaluated. Time will regain its depth. Moving less and making greater use of remote (even partial) digital working systems will offer us less time loss and more personal time periods that we can devote to our newfound sociality. Rediscovery of the home as a safe place to live and work.
