SEP. 2020 II Covid has provoked, and will continue to do so in the near future, a large selection of catering activities unmasking improvisation, management difficulties and operational inconsistencies. Those who will overcome this crisis will have shown ability, fairness and tenacity which will be important safeguards for the coming years. Those in these situations “will wear a medal of merit on their chest”, just as one who finishes a survival course safely and this the market will recognise at an economic level, with better prices, and credit, with higher insurance coverage. What is the competition scenario in the Horeca distribution sector and what size company will ultimately be better able to withstand the crisis? For years we focused on what size of company had a future in the distribution sector. The most important lesson we have learned in these difficult circumstances is that, perhaps, we had to turn our attention, not towards the size of the companies, but, towards the marginality and, above all, to the credit exposure of our customers, which must absolutely be reviewed. For years we pretended that we could support them and we fuelled bad credit competition that damaged ourselves and the market. How does our Cooperativa Italiana Catering come out of such a tidal wave? These 6 months have served to highlight the great work done over the years to make our Cooperative a solid, healthy and streamlined entity that has sailed through the troubled waters of the crisis excellently with reason and foresight. Managing a similar blackout was not easy but, in the end, we were able to support our members throughout the emergency without operational difficulties and economic and financial crises. Today we know even more that the Cooperative is fundamental for our companies and that the route taken must be resumed and strengthened. To be called on at several levels as one of the 5/6 major exponents of the Italian distribution landscape to dialogue with institutions, even if at the moment it has not brought the expected results, fills us with pride because it demonstrates the appreciation of what we do and who we are. Finally, I would like to close with a great optimism generated by the important consideration that, during the long days of the lockdown, talking to people, it always emerged that one of the strongest shortcomings felt was that of not being able to “go to the restaurant”, and the feedback was in the rapid recovery of the market. This must fill the whole world of Horeca with pride because it is a great recognition to all of us Italians in the sector that thanks to the “most wonderful catering in the world” of which we are all the creators, we can be proud to provide, not a luxury service but an essential one, for the traditions of our beautiful country.
