Choosing the first thing that comes along is not the right solution. Here are some indications to choose well by Elena Consonni Aluminium or plastic tray, cardboard container... there are many materials available for take-away or delivery, but what’s the best way to guarantee food safety? The protocols available, while stressing the importance of packaging for food safety also for Covid-19 risk prevention, are not very comprehensive. For example, the “Interim guidance on containment of SARS-CoV-2 contagion and food hygiene in catering and food administration” prepared by the ISS Working Group on Public Veterinary Health and Food Safety COVID-19 (Version of 27 May 2020) focuses on take-away and home delivery services and states that: - Prepared food must be placed in containers suitable for protected food and be separated from other goods. - Containers used for transporting food must be cleaned and disinfected after each use to ensure that food safety requirements are maintained. But what does suitable mean? How to choose the right material, juggling the many alternatives on the market? There are many parameters to evaluate: suitability for contact with the packaged food, maintenance of optimal storage temperatures, environmental impact and compliance with the relevant standards. This topic was discussed in a webinar entitled “How to choose the perfect packaging for take-away and food delivery”, organised by Formalimenti - a platform dedicated to online training for the food sector - and held by Serena Pironi (Pi.Ga Service) food technologist and food contact expert. The first aspect to consider is that the packaging must be suitable for food contact. “We speak technically of MOCA,” explained Serena Piron, “an acronym that means Materials and Objects in Contact with foodstuffs. This family includes packaging, films, trays, caps... but also knives or cutting boards, in short, any material that comes into contact with food”. There are several laws to which materials and objects in contact with food must refer. In Italy, which is at the forefront in Europe on these issues, there has been legislation on the subject since 1962. With the Ministerial Decree 21.3.73, still in force today, indications, obligations, prohibitions were conceived and, after more than 30 years, became the inspiration for the European Community for its Regulation. “This Decree,” she stressed, “contains positive lists of materials that can be used in contact with food and indicates the purity requirements for certain materials”. HOW TO FIND OUT IF THE MATERIAL IS SUITABLE To understand whether a box, film or any container is suitable for contact with food, it should be noted that it bears the words “for food” or the symbol with the glass and fork. The manufacturer must then issue a Declaration of Conformity stating the suitability for food use, any restrictions on use (e.g. “not suitable for fatty foods” or “not suitable for microwave ovens”...) and the name and address of the manufacturer or processor or importer (if it is a non-EU product). “This declaration,” explained Serena Pironi, “must be kept by those who buy and use MOCA because in case of controls can be shown to certify the suitability of the materials used”. In some products, for example rolls of film or baking paper, this information can be shown directly on the packaging. The law also introduces the concept of migration, i.e. the transfer of molecules from packaging material to food. “Molecules that migrate,” she said, “in excessive quantities can be dangerous.
