As we close this new issue of Qualitaly, Notre Dame, the French cathedral, symbol of Paris and the whole of Europe, is burning. A scene that leaves you speechless. A fire, fierce, inexorable, decisive, impatient and impossible to approach. And with the crumbling spire of Notre Dame we also lose a part of our identity as Europeans, who have made that glorious cathedral one of the symbols of our civilisation. It doesn’t matter whether they’re believers or non-believers, Eurosceptics or pro- Americans. Whatever the nationality or political party, this ‘mourning’ leaves everyone dismayed. And in front of a burning monument, mankind unites. Union. We talk about it a lot in our newspaper. Many colleagues in their editorial have insisted on this concept because it is the very essence of our cooperative. The name says it all: co-operative, which is the union of a group of members who work in pursuit of a common goal. I realise it’s not an easy task: each of us operates in areas and territories that have different needs or demands. However, the object of our work is the same: the world of catering. Beyond the products we are able to offer, our role - even through our magazine - is to provide training/consultancy. There are, alas, still many incomplete outlets, for which to consolidate the foundations, and take the responsibility to become not only suppliers of goods but also to offer them what, in the service page 20 we call ‘cooking grammar’. Because, if the restaurant of the future is looming (see article on page 16), there are still several problems to be solved, including the awareness of operators to the problem of pollution, for which our sector is also called into question with the new European Directive that obliges us to eliminate disposable plastic (cutlery, plates, straws). See the article on page 12. It’s true! Panta rei (everything flows), said Heraclitus. But in the catering industry even the smallest failure is punished by the consumer with a negative review and, consequently, the very loss of the customer. And so, today more than ever, the concept of union becomes useful. By working together, in-store and supplier relationships, we can be successful. Moreover, Notre Dame has also been rebuilt several times over the centuries thanks to a great mass uprising (Victor Hugo docet!). And this time, too, it will be like that! I am not expressing myself on the originality or ‘setting’ of the dish, but frankly looking at this shot - perhaps for the first time - I evoked the return of traditional cuisine. The dish in question was presented at the recent Madrid Fusión, 17 th edition of an important congress that brings together renowned chefs of the calibre of Ferran Adrià. I didn’t investigate what it was about. And honestly, I wasn’t curious to know. What I have left, looking at the photo, is this strong ‘nostalgia’ towards a good plate of tortellini in broth... No, I’m not a traditionalist.
